I have to do a copy of an impressionist painting, and would like like some suggestions of good, but maybe less well known artists.

You might consider American impressionists, such as Childe Hassam and Twachtman. There's a list on the first site below, with links to sites. I'm fond of Hassam and his flags series.

Or perhaps Camille Pissarro.
